Fluffy Banana Pancakes



Fluffy within, crispy outwardly, and gently seasoned with bananas and vanilla — these are amazing banana pancakes. The recipe, in all honesty are so easy to make. 


Ingredients

350g self-raising flour

1 tsp baking powder


2 very ripe bananas

2 medium eggs

1 tsp vanilla extract

250ml whole milk

butter, for frying

STEP 1 OF THE PROCESS

In a large mixing basin, sift together the flour, baking powder, and a good pinch of salt. Mash the very ripe bananas with a fork in a separate mixing dish until smooth, then whisk in the eggs, vanilla essence, and milk. To make a smooth, silky batter, make a well in the center of the dry ingredients, pour in the wet components, and whisk together quickly.


STEP 2 In a non - stick pan, melt a small knob of butter over medium heat. Cook for several minutes, or until little bubbles develop on the surface, with 2-3 tbsp of the batter in the pan. Cook for another 1-2 minutes on the other side of the pancake. Keep the pancakes warm in a low oven while you finish the rest of the batter.


STEP 3 Arrange the pancakes on plates and top with banana slices, a drizzle of sticky syrup, and, if desired, a handful of nuts.

Freezer-Friendly

The pancakes can be frozen for up to 3 months if needed. Place a sheet of parchment or wax paper between each pancake and stack after they have completely cooled. Wrap the stack of pancakes in aluminum foil or a heavy-duty freezer bag tightly. Place them on a baking pan in a single layer and cover with foil to warm. Preheat the oven to 375°F and bake for 8 to 10 minutes, or until heated.
